Stir fried chicken is one of the most terrific meals one can savor. It is filled with vegetables and could be low in saturated fat as well.  Her is recipe that s simple and fast to prepare in your kitchens but fabulously savory and filled with the necessary nutrients for the entire family.  This recipe is great with steamed rice, very versatile in its vegetable combinations that you can mixed only your choice of vegetables. 

There are hundreds of chicken stir fry recipes in the web that you can also try out in your kitchen.  This recipe however, is a classic in our family and we have been doing this at least once a month.   It is easy and versatile enough therefore great for cleaning out your vegetable left-overs in the refrigerator.  Try them now. CHICKEN AND VEGETABLE STIR FRY:  Total preparation time is thirty five minutes.  Preparation is only twenty minutes while the cooking time is only fifteen minutes.   The original recipe can make four servings.

THE INGREDIENTS:
  • Two tablespoons of sesame seeds
  • Three tablespoons of olive oil
  • Two chicken breasts, deboned and skinned, cut into uniformed bite sizes pieces
  • One bunch of asparagus, cut into one inch segments (about 12 spears)
  • Three green onions, sliced
  • Two carrots, sliced into small strips
  • Two garlic cloves, chopped
  • One can artichokes, (13.75 oz) drained, cut into halves
  • One small package of pea pods
  • One half teaspoon of powdered ginger
  • One teaspoon of red pepper flakes
  • Three tablespoons of teriyaki sauce

  • Start by preheating the wok or a large skillet over medium high heat on your American stove.
  • Add the sesame seeds to the wok and stir frequently until it is lightly toasted.
  • Then you can add three tablespoons of olive oil to the wok.
  • Add the chicken to the wok and stir frequently until the chicken is no longer pink in color. 
  • Without removing the chicken, add the asparagus, the carrots the green onions and the artichokes.
  • Continue to stir fry until the vegetables are heated through and cooked becoming crisp tender.  
  • Add the pea pods and the sliced water chestnuts.  Constantly stir to heat through the vegetables.  Make sure that the vegetables are properly heated by letting is pass through the bottom of the wok.   If you can toss the veggies, then the better results you will have.
  • Then you can add the ginger powder, the red pepper flakes and the teriyaki sauce.
  • Season it with salt and pepper according to your taste. 
  • Transfer it to a platter and serve immediately while hot.  Very nice to go with steamed rice for a complete meal.
