BEEF AND VEGETABLE STIR FRY: This recipe serves four persons and can be prepared in fifteen minutes and cooked in ten minutes.
THE INGREDIENTS:
- one cup of low sodium fat-free beef broth, can be bought in supermarkets
- one fourth cup of teriyaki sauce
- one fourth cup of rice vinegar
- two tablespoons of sugar
- one teaspoon of Asian dark sesame oil
- one teaspoon of Chinese five-spice powder or one half teaspoon of cinnamon powder
- four teaspoons of vegetable oil
- four teaspoons of cornstarch or corn flour
- one pound of flank steak, cut into one fourth inch pieces across the grain for tender results
- four cups of broccoli florets (one half of a one pound bag only)
- one and one half cups of thinly sliced sweet red pepper or red bell pepper
- one and one half cups of thinly sliced small red onions
- one bag of carrots, (eight ounces) in matchsticks
- steamed rice or brown rice to pair with the dish
LET’S MAKE MAGIC NOW:
- In a medium size mixing bowl, whisk or pour in the beef broth, the teriyaki sauce, the rice vinegar, the sugar and the sesame oil. Stir carefully to combine until they are smooth. Then add the Chinese five-spice powder and the cornstarch. Continue to stir until the cornstarch is fully dissolved leaving no clumps in the sauce. Set aside for frying.
- In a large skillet or wok, heat one tablespoon of vegetable oil over medium high heat on your American stove.
- Once the oil is hot and starts to smoke, add the flank steak strips and cook for about three minutes stirring occasionally, until they have turned brown. Three minutes means the steak is medium rare. Remove the steak from the pan to a plate and set aside. Drain any fat left in the pan and reheat the pan. Do not wash the pan.
- Reheat the pan to medium high heat and add the broccoli florets with the one half cup of water. Cover your pan and let it boil for five minutes until the broccoli is tender.
- Remove the cover and continue cooking until the water has evaporated.
- Add the remaining teaspoon of vegetable oil to the pan and the bell peppers or sweet peppers and the red onions.
- Cook stirring occasionally for about four minutes until the vegetables are crisp tender. Then add the carrots and cook for another one minute.
- Return the beef to the pan and combine the vegetables with the beef by tossing and stirring for another thirty seconds.
- Then add the sauce to the dish and stir to combine for two minutes more until the sauce thickens.
- Enjoy this recipe for stir fry with steamed rice or brown rice. Have fun and continue stir frying.
